Garlic is good for your heart. One of the reasons for this is a compound called S-allyl-cysteine, or SAC. Aged garlic extract, which is a source of S-allyl-cysteine, has been clinically studied to support heart health, but it’s found in relatively small amounts in raw garlic (so you can’t count on your pesto to offer these benefits). Interestingly, aging the garlic increases the amount of SAC. Another excellent effect of the aging process: it reduces or eliminates the “garlic” odor found in some other garlic supplements.
Clinical Studies
In a randomized, placebo-controlled study, healthy adults took 500 mg of a garlic extract standardized to provide 2.5 mg of S-allyl cysteine. Blood lipids like cholesterol and triglycerides were measured, as well as blood pressure and fasting blood sugar levels. The group taking SAC-enriched garlic extract experienced support for maintaining normal triglyceride levels, LDL cholesterol, and total cholesterol, as well as support for maintaining normal blood pressure and fasting glucose levels after 12 weeks.1
